Joshua Quinlan's Ubi Caritas, scored for unaccompanied divisi SATB choir, makes use of the original plainchant along with a vast array of contemporary compositional techniques in order to produce an ever-evolving auditory journey, ranging from the soft introduction section to the exciting coda.

The piece begins with undulating stillness, supporting the introduction of the plainchant. It then gradually transitions into a more 'traditional' section ("Exsultemus, et in ipso jucundemur") featuring extended functional harmony, before transforming into a lower-voice 'chorale' ("Et ex corde diligamus nos sincero") which is soon repeated in a glorifying tutti moment for the choir.

The piece gradually decreases in momentum, reaching a moment of stillness and reflection ("Ne nos mente dividamur, caveamus"), before returning to the undulating soundworld established in the introduction. Excitement gradually builds until the choir explodes with jollity ("Gaudium quod est immensum, atque probum"), leading to a climactic and joyous Amen.
